Valentina Pastry Lab is the first European Patisserie on the Northern Beaches

Bringing slow-made Italian cornetti, unapologetically buttery pastries and a proper European coffee ritual to Rialto Square. Forget the sad servo croissant and its flaky-but-forgettable cousins. Manly’s breakfast game has entered its European era.

At the heart of Valentina Pastry Lab’s new patisserie in Rialto Square is the cornetto: Italy’s softer, slightly sweeter answer to the French croissant, made for lingering over with a proper coffee rather than eating in traffic. It may look familiar from across the pastry cabinet, but this is not just another croissant. It is a pastry made with the kind of technique, time and attention more commonly found wandering the streets of Milan and now, a few sandy footsteps from Manly Beach.

For pastry people, it is the sort of find worth crossing the harbour for.

“Valentina Pastry Lab was designed for people who know the difference,” says the team. “The people who travel and seek out the best pastry shop in every city they visit. We wanted to bring that feeling home, a place where quality ingredients, technique and thoughtful flavour come first.”

Behind Valentina are Italian hospitality operators Dario and Paolo, who bring decades of experience to the project, supported by an Italian executive chef and pastry chef. Together, they have created the kind of neighbourhood pasticceria they grew up with: warm, unforced and centred around quality food, coffee and the simple pleasure of slowing down.

The result is less “quick coffee and muffin” and more slow European moments, the kind where an espresso, a pastry and five quiet minutes suddenly feel like a small holiday.

The cabinet begins with the cornetto but does not stop there. Expect rich laminated pastries, freshly baked bread, polished desserts, and savoury options. It is the kind of counter that makes an ordinary Tuesday morning feel significantly more glamorous than it has any right to.

For those who believe a birthday cake should arrive with main-character energy, Valentina also creates celebration cakes to order. There are catering boxes for office mornings, long lunches and gatherings that deserve more than supermarket biscuits, alongside gluten-free options and premium house coffee beans to take home roasted in collaboration with Black Drum Roasters.

Valentina calls itself a Pastry Lab for a reason. The team is constantly refining technique, experimenting with flavour and finding modern ways to honour European pastry tradition. That thinking extends beyond the cabinet, into the coffee they roast, the space they have created and the experience they want each guest to have.

The store also gives guests a window into the Pastry Lab itself, where the work behind the counter is proudly on show. Because great pastry is as much science as it is art: temperature, timing, fermentation, ratios and repetition all matter just as much as butter and imagination. At Valentina, locals can watch dough being rolled, folded, piped, glazed and transformed into the finished pastries lining the cabinet — a small glimpse into the precision, patience and experimentation behind every cornetto, bomboloni and celebration cake.

“Valentina was created to bring a little piece of the European pastry ritual to Manly,” says the team. “For us, a cornetto and coffee is not just breakfast, it is a pause in the day. Whether someone is stopping in before work, picking up a celebration cake or treating themselves after the beach, we wanted to create somewhere that feels special without ever feeling formal.”

The Northern Beaches have no shortage of cafés. But a dedicated European-style pasticceria, built around proper cornetti and the slow pleasure of a beautifully made pastry, is a different proposition entirely.

Manly has had its morning swim. Now it has its morning cornetto.
