Since opening in February, +81 Sushi Kappo has established itself as one of Brisbane’s most intimate omakase experiences, bringing a deeply considered kappo-style approach to dining in West End.
As part of an evolution of the dining experience, the 12-seat restaurant will now operate Wednesday to Saturday evenings, while introducing lunch sittings on Thursdays and Fridays alongside three new beverage pairing experiences.
The new lunch offering provides guests with another opportunity to experience Sushi Kappo’s evolving omakase journey during the day, guided by the same precision, seasonality and intentional hospitality found during evening service.
Led by Tokyo-trained chef Chef Ikuo Kobayashi, whose background includes some of Japan’s most prestigious Michelin-starred kitchens, Sushi Kappo brings together sushi and kappo – a combination exceptionally rare and rarely found even in Japan. While grounded in traditional Japanese technique, the omakase experience takes a distinctly non-traditional approach to menu composition, creating something entirely unique to +81.
The menu also embraces a considered approach to dining – free from gluten, dairy, nuts and refined sugars. These choices are not positioned as restriction, but as part of a philosophy centred on purity, balance and clarity of flavour.
Guests can choose to complement their multi-course meal with a selection of expertly crafted pairing experiences. The three new beverage programs include the Prestige Neo Experience, Prestige Neo & Sake Experience, and the Non-Neo Experience.
Invented by Bar Manager Tony Huang and co-creator Tim Pope, +81’s Neo Cocktails have become the defining signature of adjoining award-winning Aizome Bar. Crafted through a meticulous multi-day process and served in a wine-style format, the Neo Cocktails represent a globally unique approach to cocktail creation that cannot be experienced anywhere else in the world.
Using freeze-integration techniques, seasonal ingredients and unconventional flavour extraction methods, each Neo Cocktail is designed to challenge traditional perceptions of structure, texture and progression within cocktail culture.
Prestige Neo Experience pairs six Neo Cocktails with the omakase menu, while the Prestige Neo Experience includes an additional selection of four premium sakes, served alongside the sushi and nigiri courses.
Together, the omakase menu and Prestige Neo Experience create a style of dining that is globally singular.
For guests seeking a non-alcoholic pairing, or those looking to explore a different side of the beverage program, the Non-Neo Experience features six alcohol-free beverages vacuum cold-fermented using seasonal produce and premium Japanese teas, served in a wine-style format.
À la carte beverage menus are also available, featuring premium sake, Japanese whisky, champagne, and a considered selection of Australian and international wines.
