ABODE Bistro. Bar teams up with Vic’s – The Chef’s Butcher for a month long celebration of Australian produce this October

PARKROYAL Darling Harbour, Sydney’s award winning casual dining restaurant, ABODE Bistro. Bar is bringing its fresh, produce led approach to the table this October, partnering with Vic’s – The Chef’s Butcher on a four week culinary journey championing Australian farmers, producers and premium meats from 5th October-1st November, 2026. 

Guests are invited on a weekly adventure, travelling from the North Coast of New South Wales to Brunswick, Western Australia, and celebrating the unique tastes, provenance and stories of each region through carefully curated dishes and cocktail pairings.

ABODE, meaning ‘home’, champions local, seasonal produce and specialises in delicious food that is made to be shared. This new partnership with family owned Vic’s – The Chef’s Butcher, which has sourced exclusively from Australian farmers and producers since 1966, brings greater focus to the provenance, quality and people behind each cut.

The month long menu residency will feature a new premium dish each week, with a signature cocktail thoughtfully crafted to complement the flavours:

Week 1: 5-11 Oct

Features the bold flavours of wild harvested Paroo Kangaroo with morcilla sausage, onion soubise, salsa verde, padron peppers and veal jus, paired with a Lemon Myrtle Cocktail.

Week 2: 12-18 Oct

Expect tender White Rocks Veal Osso Bucco with broad beans, snap peas, asparagus and lemon jus, matched with a Spiced Negroni.

Week 3: 19-25 Oct

Discover the richness of Maremma Duck Leg Confit served with cherry gastrique, heirloom baby carrots, kipfler potatoes and duck jus, paired best with a crisp Whisky Apple Sour.

Week 4: 26 Oct-1 Nov

The series concludes with Kurobuta Pork Chop with burnt apple, hispi cabbage, witlof, watermelon radish and miso jus, complemented by a classic Ginger Highball.

The menu can also be enjoyed alongside ABODE’s weekday Happy Hour, running from 4:30-6:30pm, Monday to Friday, with $2 Nambucca oysters, selected beers and wines from $6 a glass and $15 cocktails.

Designed for a relaxed dinner, a catch up over drinks or simply a meal worth lingering over, the series offers an easy way to explore some of Australia’s premium produce thoughtfully prepared and expertly paired.
